Of course, that only counts the ones we still have in our Pokémon storage. Most of us have deleted dozens of surplus shinies over the years; mostly some of the low-quality fodder from Community Days, but I’ve even transferred a few shiny Mewtwo…
With that in mind, my current shiny count is 655 on my main and 629 on my alt. (The latter was 630 until I transferred a really low-quality Stufful to verify that it reduced my count.)

Well, we have on one side the Pokedex-Screen, which counts all different (unique) shinies you have ever had. And on the other side the counting of shinies in this moment in your storage.
The first data appears in table 48, the other one I will create.

Good idea; I hadn’t thought of that Dex feature. These appear to be the counts for my main and alt, then:

I’ve transferred over 1,500 shinies at this point to make space for big events like gofest and the tours.

I expect this number will go down rather than up.
This is because I’m currently using my daily special trades to swap Legendaries (for the guaranteed XL candy). As soon as the Season of Go has ended I’ll be back trading for potential lucky/3-star shinies.
