But have you noticed that this Gimmighoul can’t evolve? Same to myone.
But I have another one caught one year ago spawning above a golden Pokéstop, and this can evolve in a Gholdengo, using 999 of the golden coins you get in this type of Stops.

I have no idea, it’s the 1st time I see this pokemon. According to the post here on the website this gimmighoul can’t evolve, you’re right, but it’s unclear to me the difference to that other one you have (why that one can evolve). Maybe they changed something or it was a special event before? I don’t know!
I encountered a gold pokestop at least 4 times, but they didn’t give me anything related to the pokemon. I think they gave me more items, but it might have been just my impression.
The most above item in your storage are the golden coins. I have now 766, so I need 233 more to be able to evolve it. And when you spin a golden Stop you get, apart of the normal items, between 5 and 20 coins.
And to find a Gimmighoul in the wild is very difficult because first the chance of spawn is very low, and second they paint him so little that it is nearly imposible to distinguish him between the moving images around the stop.

Ok, I checked and see 1 coin exactly and, when I click it, it shows the gimmighoul that I caught. According to the pokedex, I saw 2 and caught 1… I hope I saw it in a gym or something, I hate thinking that I missed 1 of them when spinning the pokestop. I think I saw it in a gym, but can’t be sure… Anyway, i won’t concern myself with this too much, as I only have this one! 
To summarize: The Gimmighoul with the background is also a Costumed Gimmighoul and therefore it cannot evolve. Ones without the background also don’t have the costume and therefore should be able to evolve.
The Gold Pokestops were bugged. According to Niantic, the issue is being ‘investigated’.

Ah, I didn’t realize it was a costume pokemon, I thought they all looked like that. I like that the coin has an inscription (9) for the anniversary, that’s neat.
