Does anybody know why male and female Sunny/Rainy Castform both are registered in the Pokédex, but I only caught one? So I can’t have both genders.

Take a look to the four you have, there will be at least one male and one female.
They have not implemented the couloring feature for every form, only for different shape.
I’m only going to keep one of each. The rest can go die in gyms.
